Orzo & Broccoli

I hope everyone had a wonderful holiday weekend celebrating Memorial Day as they wished. An easy recipe to start the next half of the week off with... simple and delicious, what could be better?!

Ingredients:
- 2 cups orzo pasta
- 2 cups frozen organic chopped broccoli
- 1/2 small white onion (optional)
- 2 T of flax seed
- fresh mint
- cumin
- 2 T low sodium soy sauce

Bring water to a boil on stove top and orzo pasta. Cook until soft. Add frozen chopped broccoli. Again, cook until soft. Spoon mixture into a bowl and sprinkle with flax seed and white onion (optional). Top off with as much mint as your hear desires and cumin to taste. Finish with drizzling soy sauce and you're ready to eat! Serves 2.
