Pisa, Italy

I literally laughed when I came upon the leaning tower of Pisa. I kept thinking, "It's really real. It's right here. And I'm standing in front of it." The natural urge is to lean with the tower, so the spread of people mimicking the angle was none less than amusing! I had made a pit-stop in Pisa, so the city was trekked with a huge backpack on my back. Not ideal, but definitely worth it in the end.

Black Bean Burger

Let's take a small break from the trip and get back to what Humblebee blogs best about: food. This recipe is incredibly easy and by far one of the more tastier creations.

Ingredients:
- 1 can of organic black beans
- 1/2 green bell pepper
- 1/4 yellow onion
- 1/2 cup bread crumbs
- 1 organic, free-range egg
- 3 cloves of garlic
- cilantro
- chili powder
- cumin

Preheat oven to 375˚ and lightly (olive) oil your baking sheet (can also be done on the grill thus fall for tailgating!). Mash the drained and rinsed black beans in a bowl. There will always be some chunks, so no worries. Blend (via blender) chopped green bell pepper, onion, cilantro and garlic, then add the beans and mix again. In a separate bowl, add mix the egg, chili powder and cumin (I was quite generous with the chili powder, so have at it!). Add the bean-veggie mixture to the eggs and spices, then slowly add the bread crumbs until everything begins to hold together. Separate into 4 patties and bake for about 10-15 minutes each side.



At the end of the bake time, I broiled each side for a minute or two to help the patty stay together. If you have any leftover veggies mix in the blend/food processor... add it to the top of your patty, tasty stuff. For condiments, I added brown mustard and a sweet-tasting ketchup and for extra crunch, a leaf of green lettuce. The burger falls apart easy, making quite a mess. But I always think, "The messier, the tastier." Recipe was found on allrecipes.com, however I made it my own by adding some favorites!
