Trout & Raspberry Sandwich

Ingredients:
- 2 organic, humanely-raised trout fillets
- 2 slices of whole wheat bread
- fresh clover sprouts (can substitute with green leaf lettuce)
- fresh cilantro
- avocado
- 1 full slice of a small white onion
- raspberry preserves
- black pepper
- provolone cheese (optional)
Heat oven to 350º. Place fillets on sheet and sprinkle with black pepper and bake for 10 minutes or until trout becomes flaky. While baking, prepare first slice of whole wheat bread with provolone cheese covered with sprouts and cilantro. Slice 1/2 avocado and one full slice of a small white onion, separate rings, lay over top. Spread the raspberry preserve on the other slice of bread. Finish off with the trout on top. Serves 1.
